Four Brothers to Open in Former Los Coyotes on Mitchell Bridge

Since The Arbor mixed-use complex was built on Mitchell Bridge Road, the restaurant space in it has been a Harry Bissett’s, the Iron Grill and Los Coyotes, a casual Mexican eatery. Now, making perhaps the most sense of all, it’s slated to become Four Brothers Sports Tavern, a family-friendly gastropub/sports bar headed up by chef Andrew Miller.

Miller was formerly the executive chef at Chateau Elan and has more than 20 years of experience in the food business, which always bodes well. He said he does indeed have three brothers, and that both the name and the project of the restaurant were inspired by his late mother, who instilled them all with an entrepreneurial spirit. (Although two of the four Miller brothers live out of town, all four will be involved to some extent.)

Miller said he aims to make use of local ingredients as much as possible but shied away from calling his restaurant “farm-to-table,” adding that he believes in truth in advertising. Four Brothers will buy its beef from a Georgia co-op, use a local bakery for much of its bread and shoot for local produce whenever possible. In addition, Miller guessed that four of the 12 to 14 taps being added to the bar will pour Terrapin selections.

As far as the menu is concerned, Miller said there will be sports bar standards like burgers and wings, but he also wants to push the envelope a bit, with hot boiled peanut hummus and pretzels made in house with a beer-cheese dipping sauce.

Renovations on the interior are almost completed, with the flooring redone, the walls painted, many more televisions added, reclaimed wood providing decorative details and a vintage sports theme throughout. As well as trying to make the bar a focal point, Miller said Four Brothers will have Keno and video games, including Golden Tee, but he continued to stress the “family-friendly” aspect.

Licenses and inspections are next up, but Miller said Four Brothers will likely be open mid-February.
